Vegetable potato fritters


Combine the cooked red lentils with the rest of the ingredients in a large bowl until mixed.

Add 1 tbsp of olive oil to a pan on a medium heat. Create fritters using 1 ½ tbsp of the mixture, rolling into a ball and flattening out.

Cook in the pan for 4 minutes each side.

Serve with a side of your choice.


2 maris piper potatoes, peeled and grated

1 red onion, chopped

1 carrot, peeled and grated

2 cloves of garlic, minced

5 tbsp plain flour

150g red lentils, cooked

1 tbsp paprika powder

½ tsp salt

1 tbsp olive oil
