Vegan Rocket & Pear Salad With Walnuts
Whisk the oil, vinegar, mustard, salt, and pepper.
In a mixing bowl, combine the lettuce, pears and rocket and toss with the dressing.
Top with walnuts and serve.
For the salad:
100g rocket, trimmed, washed, and dried
2 pears, cut into 16 wedges
120g walnuts, chopped and toasted
For the dressing:
½ tsp Dijon mustard
3 tbsp extra-virgin olive oil
1 ½ tbsp balsamic vinegar
Salt & pepper
