Chicken And Quinoa Soup

Instructions

Bring the chicken, broth, onion, water, carrot, garlic, thyme, bay leaf, and pepper to a boil.

Cover and simmer for 5 minutes.

Stir in the quinoa thoroughly.

Bake for 5 minutes at 180° C / 350° F.

Stir in the peas thoroughly for 8 minutes

Remove the bay leaf and serve.

800ml chicken broth

1 tbsp thyme, chopped

240ml water

3 large garlic cloves, minced

1 carrot, sliced

1 tsp black pepper

450g boneless, skinless chicken breasts, cubed

120g uncooked quinoa

1 dried bay leaf

56g sugar snap peas, sliced
