Lemon Potato Salad
Boil the potatoes in a pan for 10-15 minutes on a medium heat until soft.
Drain the potatoes and add the rest of the ingredients to a large bowl.
Toss the potatoes in the bowl until the ingredients have fully combined.
Serve warm, or refrigerate and serve cool.
800g baby potatoes, halved
Juice of 1 lemon
30g rocket, washed
70g spinach, washed
4 spring onions, sliced
3 tbsp olive oil
½ finger length fresh ginger, grated
Salt and pepper to taste
