Peaches and Cream Crepes
In a bowl, combine the flour and salt. Then, make a well in the middle, crack the egg and beat into the mixture.
Slowly pour the milk into the mixture, little by little, followed by the vegetable oil, until there are no lumps.
Put the pan on a medium to hot heat and add a teaspoon of olive oil.
Once the pan is hot, pour in a ladle of the pancake mix and move the pan so it fills the surface. Leave to cook for around 30 seconds, then flip and cook for a further 30 seconds.
Continue this with the rest of the pancakes, then serve with 2-3 slices of peach and 2 tbsp of whipped cream.
50g plain flour
150ml semi-skimmed milk
1 tbsp vegetable oil (and extra for frying)
¼ tsp salt
2 peaches, destoned and sliced
8 tbsp whipped cream
