Mango, Jalapeño & Bean Salad

Instructions

Divide lettuce among 6 plates.

Mix the pepper, beans, corn, mango, avocado, onions, and jalapeño pepper.

Blend the lime juice, olive oil, coriander , chilli powder, black pepper, and salt in a jar with a secure lid and shake vigorously to combine.

Divide the beans and mango mixture into 6 and place on top of the lettuce.

Drizzle the dressing over the salads and serve.

1 pepper, seeded, cut into ½-inch pieces

240g avocado, cubed

2 tbsp lime juice

1 tsp low-sodium salt

1 tin of sweetcorn

1 tsp chilli powder

1 jalapeño pepper, diced

1 tin of mixed beans

2 mangoes, cut into 1/2 inch cubes

2 tbsp fresh coriander, chopped

1 tbsp olice oil

1 tsp black pepper

1 shredded lettuce
