Sweet Potato Parcel
Preheat the oven to 200 degrees celsius. Place the sweet potato on a baking tray and drizzle with 1 tbsp of olive oil. Cook for 25 minutes.
Whilst the sweet potato cooks, bring a pan to a medium heat and add 1 tbsp of olive oil.
Cook the onions in the pan for 5-7 minutes until soft, then add the garlic and chilli flakes and cook for a further 2 minutes.
Take off the heat, then add the chestnuts and sweet potato. Season with salt and pepper.
Line a baking tray with baking paper and add a layer of filo. Brush a light layer of oil over the filo and add another sheet. Continue until 4 sheets have been used.
Spoon the potato mixture onto the filo, then fold the filo to cover the mix.
Scrunch the last piece of filo and place it on top of the parcel. Bake for 30 minutes and serve.
4 sweet potatoes, peeled and cut into chunks
5 sheets filo pastry
2 tbsp olive oil
1 onion, sliced
2 garlic cloves, peeled and chopped
200g chestnuts, chopped
½ tsp chilli flakes
Salt and pepper to taste
