Fluffy American Pancakes
In a bowl, combine the flour, sugar, baking powder and salt, then set aside.
In a separate bowl, whisk together the eggs and milk. Then add the butter and combine.
Pour the egg mixture into the dry mix and combine until smooth and there are no lumps. The mix should be thick.
Add 1 tbsp of olive oil to a pan on a medium heat, then use a ladle to spoon ¼ of the mix into the pan.
Cook for 1-2 minutes until the top begins to bubble, then flip and cook for a further minute.
Repeat the process with the other 3 pancakes, then serve with the desired toppings.
135g plain flour
2 tbsp caster sugar
1 tsp baking powder
¼ tsp salt
130ml semi skimmed milk
2 tbsp butter, melted
Olive oil for cooking
