High Protein Caprese Salad With Grilled Chicken Breast
Preheat a grill or grill pan to medium-high heat.
Rub chicken breasts with olive oil and season with salt and pepper.
Grill chicken for about 6-7 minutes per side, or until cooked through.
Let chicken rest for 5 minutes, then slice into strips.
In a large bowl, combine cherry tomatoes, mozzarella cheese, and basil leaves.
Add chicken strips to the bowl.
Drizzle with balsamic glaze and toss to combine.
