Cream Cheese & Salmon Eggs
Instructions
Place the cream, salt, and eggs in a large mixing bowl, and use a fork to lightly beat the ingredients until everything is properly combined.
In a large frying pan over medium heat, melt the butter. When the butter is nice and hot, scrape the egg mixture into the pan, and fry for 6-8 minutes, stirring at regular intervals until the eggs are just about cooked. Stir in the salmon pieces and cream cheese for 1 additional minute, or until the eggs are properly cooked.
Scrape the cooked eggs onto a serving platter, and sprinkle the dill, capers, and red onions over the top in an even layer. Decorate the dish with sliced tomatoes before serving.

12 large free-range eggs
1 1/2 tbsp butter
115g smoked salmon, chopped into small pieces
3 tbsp cream cheese
1 tbsp fresh dill, chopped
1 tbsp capers, rinsed and chopped
2 tbsp red onions, finely chopped
3 tomatoes, sliced
