Red Bean Stew From Jamaica
Heat the oil in a saucepan and cook the onion and carrots, about 4 minutes.
Add garlic, sweet potato followed by kidney beans, tomatoes, curry powder, thyme, allspice, salt, and black pepper.
Stir in the water, and simmer, covered, for 30 minutes.
Stir in the coconut milk right at the end.
1 onion, chopped
2 carrots, cut into slices
1 can of coconut milk
2 garlic cloves, minced
1/4 tsp black pepper
1 sweet potato, peeled and diced
1 can of red kidney beans, drained and rinsed
1 tbsp olive oil
1 tsp hot or mild curry powder
1 tsp dried thyme
¼ tsp ground allspice
½ tsp low-sodium salt
1 can of chopped tomatoes
