High Protein Cauliflower Fried Rice With Chicken And Vegetables
Heat sesame oil in a large pan over medium heat.
Add garlic and ginger and cook until fragrant, about 30 seconds.
Add chicken and cook until no longer pink.
Add onion and peppers and cook until soft.
Add cauliflower, soy sauce, salt, and pepper and cook until cauliflower is tender.
Push rice mixture to the side of the pan, add beaten eggs, and scramble.
Mix eggs into the rice mixture.
Add frozen peas and cook until heated through.
Garnish with coriander and spring onions.
1 head of cauliflower, chopped into small pieces
450g chicken breast, cubed
1 red pepper, diced
1 green pepper, diced
1 onion, diced
2 garlic cloves, minced
2 tbsp sesame oil
2 tbsp soy sauce
1 tsp ginger, grated
Salt and pepper to taste
2 eggs, beaten
85g coriander , chopped
85g spring onions, chopped
120g frozen peas
