High Protein Chicken And Broccoli Alfredo With courgette Noodles
Heat a frying pan over medium-high heat. Add the olive oil and chicken to the frying pan. Cook until the chicken is no longer pink, stirring occasionally, for about 5-7 minutes.
Remove the chicken from the frying pan and set aside.
Add the broccoli florets to the same frying pan and cook for about 3-4 minutes, stirring occasionally until soft.
Add in the garlic, onion powder, dried oregano, dried basil and cook for an additional 1-2 minutes until fragrant.
Stir in the almond milk, Parmesan cheese and salt and pepper to taste.
Reduce the heat to medium-low and let the sauce simmer for about 6-8 minutes.
While the sauce is simmering, prepare the courgette noodles by spiralizing them.
When the sauce is done, add in the cooked chicken and courgette noodles. Toss everything together.
Let the mixture cook for an additional 3-5 minutes until the courgette noodles are cooked to your liking.
Garnish with some more Parmesan cheese and serve.

4 boneless, skinless chicken breasts, sliced into small chunks
180g of broccoli florets
2 tbsp of olive oil
470ml of unsweetened almond milk
2 cloves of garlic, minced
1 tsp of onion powder
1 tsp of dried oregano
1 tsp of dried basil
120g of grated Parmesan cheese
Salt and black pepper to taste
