High Protein Cottage Cheese Pancakes
In a large bowl, mix together the cottage cheese, oat flour, almond flour, eggs, baking soda, and salt until well combined.
Heat a nonstick frying pan or griddle over medium heat.
Spoon 113g of the pancake batter onto the frying pan for each pancake
Cook for about 3-4 minutes on each side, until golden brown and cooked through.
Serve hot with your favourite toppings.

120g oat flour
2 tbsp almond flour
2 large eggs
