Grilled Lamb Chop and New Potatoes
Preheat the grill to a high heat. Place the potatoes in boiling water and boil for 15 minutes until soft.
Whilst the potatoes are cooking, rub the lemon zest and most of the oil into the lamb chops and season with salt and pepper.
Grill the lamb chop and tomatoes for 10 minutes until golden, ensure you turn the lamb over halfway.
Drain the potatoes and using the same pan, fry the garlic in the rest of the oil for 1 minute. Tip the potatoes into the pan and use a masher to crush them into the garlic.
Stir the spinach into the potatoes and season.
Serve the potatoes with the lamb and tomatoes.

150g new potatoes
60g baby spinach
60g cherry tomatoes
1 tbsp olive oil
1 garlic clove, minced
½ lemon zest
