High Protein Egg With Minced Pork And Vegetables

Instructions

Heat the sesame oil in a large pan over medium-high heat.

Add the ground pork and cook until browned, breaking it up as it cooks.

Add the onion, carrots, celery, garlic, and ginger. Cook for 5 minutes or until vegetables are tender.

Stir in soy sauce and chicken broth.

Add coleslaw mix and cook until wilted.

Push the mixture to one side of the pan and pour the beaten eggs onto the other side. Scramble the eggs until cooked through.

Stir everything together, then sprinkle with spring onions and serve with sriracha sauce (optional).

1/2 onion, diced

240g shredded carrots

120g diced celery

3 cloves garlic, minced

1/2 tsp ground ginger

30ml soy sauce

85ml chicken broth

100g dry coleslaw mix

4 eggs, beaten

2 spring onions, sliced

sriracha sauce (optional)
