High Protein Smoked Sausage & Eggs
Whisk together the cream and eggs in a medium-sized mixing bowl. Fold in the cheese, and a pinch each of salt and pepper. Let the egg mixture stand on the counter while you prepare the rest of the dish.
Set the oven to preheat to 200°C / 400°F, with the wire rack in the centre of the oven.
Heat a non-stick, oven-safe frying pan over medium heat before adding the sausage, and frying for 5-6 minutes or until evenly browned. Add the spring onions and mushrooms to the pan, and stir for an additional 5 minutes, or until the mushrooms darken in colour. Turn off the heat.
Carefully pour the cheesy egg mixture over all of the ingredients in the pan. Place the pan in the oven, and bake for 25 minutes or until the eggs are no longer runny.
Gently loosen the edges of the egg around the pan with a sharp knife before slicing. Serve the eggs and sausage hot, garnished with extra spring onions.

8 large free-range eggs
240g mozzarella cheese, grated
Pinch of sea salt
Pinch of freshly ground black pepper
340g smoked sausage, sliced
85g sliced spring onions (extra for garnish)
240g button mushrooms, sliced
