Smashed Avocado and Boiled Eggs on Sourdough
Instructions
Fill a small to medium saucepan with cold water and place the egg in the water
Bring the water to the boil and simmer for 7 minutes
Carefully remove the egg from the water and allow to cool
Whilst the egg is cooling, toast the bread
Carefully cut the avocado in half, remove the stone and scoop out the inside and place in a bowl
Using a fork, mash the avocado and season with salt and pepper to taste
Spread the toast with the smashed avocado
The egg should now be cooled, so remove the shell and slice
Place the egg slices on top of the avocado
Eat and enjoy

Half a medium avocado
